  • 1 tablespoon yellow mustard seeds
  • 1 tablespoon dried curry leaves, crumbled
  • 1 teaspoon Kashmiri chili powder (for vibrant color and mild heat)
  • ½ teaspoon cayenne pepper (adjust to your preferred level of heat)
  • ½ teaspoon turmeric powder
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves

Instructions:

  1. Toast for Aroma: In a dry skillet over medium-low heat, add the coriander seeds, cumin seeds, fenugreek seeds, and mustard seeds. Toast them, stirring frequently, for 2-3 minutes until they become fragrant and start to slightly change color. Watch them carefully to prevent burning.
